Barrel-Aged Apple Cinnamon Drops: A Celebration of Craft and Our First Year

One year ago, we opened our doors with a dream: to create spirits that tell a story, crafted with heart, patience, and a relentless dedication to quality. Today, as we celebrate our first anniversary at Connecticut Distilling, we’re proud to unveil something truly special: Barrel-Aged Apple Cinnamon Drops.
This spirit was born from experimentation. What happens when you infuse fresh apples and pure cinnamon sticks in our Drops spirit – well known for being fermented and distilled from IPA beers. Apple Cinnamon Drops was born, a crisp, aromatic blend that balances the sweetness of orchard-fresh apples with a subtle kick of real cinnamon. We decided to take it a step further.
Each batch was rested in charred American oak barrels, allowing the flavors to deepen and mature. Over time, the warmth of the spirit pulled notes of vanilla, caramel, and toasted spice from the wood, creating a layered profile that’s richer, rounder, and perfectly balanced.
Our 1-year anniversary party at our tasting lounge was indeed the grand unveiling of this new product, and it was a hit. Alongside the product launch, we introduced two new fall-inspired cocktails: Around The Campfire, a take on an old fashioned with Barrel Aged Apple Cinnamon Drops, marshmallow syrup, bitters, and a toasted marshmallow garnish; and Spired Orchard, with Barrel Aged Apple Cinnamon Drops and fresh apple cider. Both delicious, and both only available inside of the Connecticut Distilling Tasting Lounge located at 2066 Thomaston Ave, Waterbury CT.
Everything about Drops is Connecticut-made. We source local ingredients, hand-blend every batch, and oversee every step right here in our Waterbury facility. It’s not the fastest way to make our spirits, but it’s the right way.
